The British crave fried foods, so do the Haitians. It is within the Haitian tradition that almost every Friday many families crave fried food. Which means that everything on the menu includes fritters: deep fried pork, fried plantains, fried fish, marinades, accra, fried potatoes, fried sweet potatoes, fried breadfruits, fried chicken etc. Everything is served with watercress or a spicy vinaigrette (Pikliz). They are usually complemented with rice and red beans, rice and black mushroom. As dessert, the delicious sweet potato pudding is also served. These fried foods require good care, patience, and a lot of vegetable oil. So, this recipe is a basic guide to achieve a satisfying result.
Ingredients:
• 2 green plantains
• 2 medium sweet potatoes
• ¼ breadfruit
• 2 medium malanga roots (white yautia)
• 15 pieces pork bites
• 2 cups flour
• 15 pieces pork bits
• 1 teaspoon salt
• 3 cups vegetable oil
• 1 Tostonera (Plantain Press)
Instructions:
1. Peel plantains and slice them diagonally into 1-inch/piece, then soak in 2 cups water
flavored with 2 tbsp. of sour orange juice or vinegar. See recipe!
2. Peel and grate malangas in a small container. Pound or blend ¼ scallion, 1 garlic clove, hot pepper to obtain a pulpy consistency. Add chopped ¼ onion, ¼ green and red bell pepper, and parsley, salt, pinch black pepper, baking powder and combine the whole mixture thoroughly. See recipe!
3. Peel sweet potatoes, slice them lengthwise into 1/4 inch, and soak in water.
4. Peel 1/4 breadfruit, slice it lengthwise into 1/4 inch, and soak in water as well.
5. In a small bowl, bring into a smooth consistency flour with 3/4 cup water. Add in 1 egg yolk, salt, parsley, chopped onion and green pepper, black pepper, garlic, unstemmed thyme sprig, pinch baking soda, leftover chicken chunks, and 3 tbspn of its sauce, pikliz.
6. Heat oil to fry separately sweet potatoes, breadfruit, plantains, accras, marinade, then
pork bits. Pay good attention to all ingredients while turning them to other side with a skimmer or a 2-tined fork until golden brown.
7. Remove fried foods, place them on paper towels to get rid of excess oil. Serve hot
with pikliz.
