Ingredients:
• 3 cups long-grain Basmati rice (white)
• 5 cups water
• 3 teaspoons salt
• 1 garlic clove, peeled optional
• 2 tablespoons vegetable oil
• 1 drop lime juice
• 1 scallion, root and leaf removed
Instructions:
1. In a cast iron pot, bring to a boil 4 cups water with scallion and salt on medium heat (10 minutes).
2. Rinse white rice with cold water, add to boiling water, .
3. As soon as water evaporates (5 minutes), lower heat and cover rice (20 minutes).
4. Uncover, fluff rice, cover again, and continue cooking for 10 minutes.
5. Turn off heat, stir before serving with beans sauce and legumes.
