Ingredients:
• 8 medium-size potatoes
• 1½ cup evaporated milk
• 1/2 cup diced onion
• 1/2 cup diced (green/red) pepper
• 1½ cup mozzarella cheese
• 1 pinch salt to taste
• 2 tablespoons fresh parsley or flakes
• 1 tablespoon flour
• 1/2 cup butter
• 3 tablespoons Ragù or mustard
Whether they are boiled, baked or fried, potatoes add fine and excellent Haitian dishes to the kitchen table.
Instructions:
1. Peel and slice potatoes ⅛ inch in a pan, then boil on medium heat for 10 minutes. Do not overcook!
2. On the other hand, in a saucepan, melt butter on medium heat, then add onions and green peppers while stirring.
3. Let simmer, add milk, then flour previously dissolved in milk. Stir and incorporate Ragù or mustard until thick.
4. Grease pan or pyrex bowl with butter, place one layer of cooked sliced potatoes, then add one layer of bechamel sauce and cheese. Fill pan with layers of sliced potatoes, sauce bechamel and cheese.
5. Preheat oven at 350 degrees, place pan in oven, let cook for 45 minutes or until golden brown.
6. Remove from oven and serve hot.
