Haitian Creole Cuisine The Traditional Haitian Creole Cuisine
Oatmeal refined (Labooyee Avwahn-n)

Haitian oatmeal is among the many breakfast meals savored for its quick preparation, its refined taste and healthy benefits. It's also convenient for a good light supper, especially with the creamy and refined consistency brought into this recipe.

Ingredients:

1 cup old-fashioned oats

2 cups evaporated milk

1 cinnamon stick

1 whole anise star

1/8 teaspoon nutmeg powder or grated

1/2 teaspoon grated lime skin

1 teaspoon margarine or pinch of salt

1/2 cup brown sugar or sugar to taste

1 teaspoon grated ginger

2 teaspoons vanilla extract

2 cups water

½ ripe bananas

Instructions:

1. In a blender soak oats in 1½ cup water, let soak for 1½ hour. The more soaked in water the more refined porridge will be.

 

2. In a medium pot, bring to a boil milk and half cup of water mingled with cinnamon stick and anise star over low-medium heat.

 

3. In the meantime, puree oats with half ripe banana until a creamy consistency is achieved.

 

4. As soon as milk started boiling, add oats puree while stirring constantly to avoid bottom crust and lumps. Add sugar, nutmeg powder, vanilla extract, lower heat, and simmer for 5 minutes.

 

5. Add margarine, pinch of salt (optional), stir, then simmer for 5 more minutes.

 

6. Turn off heat and serve warm with bread.
